Around the Mills: The ancient miller's house, where we live, is near the mills. Our ten acres of 'garigue' surrounding the mills has wild thyme, rosemary, mint and lavender among many other plants growing wild and has supposedly medicinal properties. It certainly emits a gorgeous perfume. We have our own little vineyard. You will be given a complimentary bottle of our delicious red wine. Grown and prepared in the ancient classical way!

We have dogs, cats, chickens , a horse, and parrots. So, though we adore animals you will not be able to bring yours. Our little dogs, Lolita and William, both Coton de Tulears, adore visitors and will welcome you to our grounds. Village Activities: The friendly, wine producing village provides walks, excursions and village open air dances and (occasionally) meals in the summer. The small supermarket, there's a butcher, post office and pharmacy. Our lovely old horse is a Camargue and very friendly, loves to be given bread and carrots. Not suitable for riding but horses can be sometimes be rented locally.

Fantastic sightseeing: for instance the famous Medieval Walled City of Carcassonne is reached in 25 minutes. There are beautful abbeys nearby and of course the Cathar Castles, from the early Middle Ages, are worth a visit. In fact, the mill itself dates from the Cathar period (1266) and is probably the first windmill in the South of France.

Drive through beautiful countryside to the Dinosaur museum at Esperaza. It's at an hour's drive from here and it will take you back 70 million years.

In 1988 Allan and I moved here permanently. He carried on teaching his students abroad via video conferencing (Physics Prof) and lecturing occasionally as well as doing research. I stopped my Clinical Psychology Psychotherapy practice and went in for spinning, weaving, goats, horses, chickens, gardening etc. This 'back to nature' period left us with the chickens (eggs!), 1 old horse, a vineyard (wine) and a beautiful wooded area around the Mills, having planted almost 1000 trees.

Heated Pool, tiled (dolphin) private to both mills. Pool has large terrace for sunning. Satellite Free to Air TV! The Sloping Roof Mill, has been completely renovated and is open-plan apart from the bathroom. Its sloping roof is typical of regional Languedoc windmills. built in the 13th century together with its twin mill and both are described by a historian as the first windmills in the South of France. Int. diameter about 4.5 meters and very comfortable. There are two floors, a decorative beech and wrought iron spiral staircase leads up to the top floor. On request we can provide a kids stairgate, high chair, cot. Downstairs there is a Louis Philippe style sofa bed which converts to a comfortable double bed. An ancient French country style cupboard adds a regional flavour. Luxurious, kitchen equipment includes an electric spit in the oven. The sleeping area upstairs has two single decorative black and brass beds. Built-in wardrobe. See photos on my Website!

Perfect, Private, Picturesque Vacation Rental

Our vacation at LA COUSCOUILLETTE in the Sloping Roof Mill was "perfect" in every sense of the word. We had lovely hosts, clean and tastefully decorated accommodations, wonderful views of the countryside from our private terrace , culture at our fingertips (Carcassonne, Lagrasse etc), fresh produce from our host's garden, quiet, starry nights, fresh eggs ( conveniently provided by our host's "happy hens"), private pool . . . and the list could go on and on. But what remains uppermost in our minds, is that LA COUSCOUILLETTE will ALWAYS be our first, preferred address in the Aude/Languedoc area. Thank you Margaret and Allen! "We shall return!"

One of the most relaxing holidays we have been on in a long time. This is our second holiday in the Sloping Roof mill and with the new pool this visit surpassed the last.

Wildlife abounds (toads, grasshoppers, dragonflies, butterflies and even a sighting of a wild boar).

A wonderful location to unwind and watch the world go by.

Our first experience of the area 22/8/10 - 28/8/10

We arrived (having followed the specific instructions given) - with few problems, though the drive up the hillside is not for the faint-hearted! The Mill was clean, but the accommodation really wasnt suited to 2 x adults and 2x young children - it would accommodate 2 people comfortably but for the amount paid was a really tight squeeze with little storage facilities for food (very small fridge for family of 4) or clothes. There could also be a real saftey issue with a toddler as the internal staircase was open and very steep and wobbly. Luckily our youngest is used to open stairs. We had to pull out a double bed every day, which meant that we had no floor space downstairs! The fact that we had to make up our beds on arrival simply added to what was a very long day by then. I think I just got carried away when booking! The saving grace for us as a family was the pool - lovely. The area and local people where also another reason to return to the region, being very welcoming wherever we went with little French between us!

Owner's Response: Dear Holiday Rentals, We’re sorry that this family was disappointed but consider this an unfair appraisal. The guests were clearly informed about the size of this little mill, built in 1260. The exact diameter is mentioned on our own website. The pullout bed is also clearly described and considered very comfortable by all other guests. Obviously one should fold it up in the daytime. The staircase could have had a child’s safety gate put on it if requested, and is perfectly safe, also clearly visible in the photos. All in all, a very unfair appraisal.

Sloping Mill, Superb

My partner and I recently stayed at La Couscoullette in the Sloping Mill accommodation.

We had a marvellous stay. The Sloping Mill is unique and is equipped with everything you need for your holiday. The beds were extremely comfortable and the outdoor furniture and private terrace were a superb spot to have breakfast in the morning sunshine.

The views from the whole complex are stunning and far reaching.

The owners are attentive to your every need and their dogs, horse and African Grays are very special.

The huge swimming pool and the poolside furniture are luxurious and a great place to relax, swim and enjoy the French countryside.

A stay at La Couscoullette is a real treat and we will definitely be going back.

A Special Place

We've stayed here for two weeks, two years in succession and intend to stay again next year.

We received a warm welcome from Margaret and Alan, who are on hand if you need help but not at all intrusive. The fresh eggs which Alan gave us were delicious!

We love the mill and it's location. The views are spectacular, mountains, garrigue and vineyards. We feel we've found our tranquil heaven on earth. The facilities are all we could wish for and the new pool is fabulous.

Montlaur is a small quiet town and a good base for exploring..... The Pyrenees, The Canal Du Midi, Carcassonne, The beaches..... We've had some great excursions in between lazy days by the pool. Evenings were spent either barbequing in the grounds of La Couscouillette or enjoying a meal at one of a number of excellent restaurants in Lagrasse, Fabrezan or Carcassonne.

We will be returning to this special place.e sloping roof mill.

Sloping Roof Mill

We stayed in the Sloping Roof Mill in September 2007 and June 2008 and will be returning in June 2009. The fact that this is our third visit says a lot about what we think about the mill and the warm welcome we received from Margaret and Allan. The mills are in perfect condition, fully equipped spotlessly clean and full of character. Surrounded by vineyards and beautiful countryside, the location is ideally suited for a peaceful, relaxing holiday away from it all. A car is a must for exploring the area and visiting the local restaurants. Outside the mills, the swimming pool is truly fabulous and the BBQ area is perfect for outdoor dining. We loved having breakfast on the terrace overlooking the village of Montlaur, walking through the vineyards, relaxing by the pool and strolling down to the village to purchase some of the local wine. We cannot recommend the sloping roof mill enough.

These Mills are extremely unique. Historically as well as beauty and comfort wise. Built during the Cathar Wars in 1260 the 'Couscouillette Mills' are described in a book researched at the turn of the last century by a Catholic Priest delving in ancient annals at a nearby Abbey, the book was recently republished, La Couscouillette fills a chapter. But as well as the important history, the positioning of this domain, on top of a hill with beautiful views and surrounded by 10 acres of countryside, including our little vineyard is unbeatable. We put a complementary bottle of our own traditionally made red wine in your Mill for you. From Grenache Noir grapes in our small adjoining vineyard.

The windmills overlook a small village in the Languedoc. Shops at just a few minutes walk, yet as the mills are at the edge of the village they are very private and peaceful. From Grenache Noir grapes in our small adjoining vineyard.The domain with the mills in it has 10 acres of own grounds, seamlessly joining the 'garrigue' for superb nature hikes. Drive in just over half an hour, (35 km) to Narbonne's sandy, Mediterranean beaches. Situated between the Roman town of Narbonne and Carcassonne, with its Medieval Cité at just half an hour. Carcassonne Airport with Ryan Air flights at 25 minutes.

Water Park at Carcassonne, 30 minutes drive. Parc Aquaviva.

Flights to Stansted, East Midlands, Liverpool, Bournemouth, Ireland, Scotland, Belgium and Germany. From Beziers (75 minutes) to Bristol and Luton as well as Stockholm, Oslo and Dusseldorf.

  • The mill has an inner diameter of 4.5 m, but feels more roomy, due to the open plan style, the only doors are on the bathroom area. So there are 'sleeping areas' on the two floors, rather than individual bedrooms. There are 2 levels. Downstairs the comfortable double pullout bed/divan is closed in the daytime when this level resumes its function as living room. Upstairs there are two pretty single beds.
